Busy Mom Dinner Idea: Black Bean Salsa with Grilled Chicken Salad + Pizza

Most days are pretty busy for my family. We have school work to complete, outings to the library, playground, and field trips. Even with the arrival of summer, our days don’t change up too much. After a long day of errand running or hanging out with the kids, I’m looking for a quick dinner solution. I still want my family to have something that’s good for them, but I want it to be done fast! 

I head over to my local Publix Supermarket for everything I need. It’s less than a mile from my house and I’m actually there a few times a week. Going on right now (from 5/19 to 6/8) you can get 2  Freschetta ®Pizzas for $10. I pick up two because I have a husband and growing boys who eat all like truck drivers. You can find it in the freezer section with other frozen foods.

 

Freschetta ® comes in several different varieties like the Brick Oven Crust and Naturally Rising Crust, but the Freschetta ® Artisan Crust Pizza is new at Publix. It’s made with quality ingredients and 3 whole grains that are directly in the crust. On the regular, Freschetta ® Naturally Rising Crust Pizza is actually my go to choice if I want fast pizza at home. The dough is soft and it’s as close as I can get to an authentic pizza shop in my kitchen. 

This past Friday for a quick dinner, I made a Black Bean Salsa with grilled chicken salad to go with our pizza. I used fresh spinach instead of romaine lettuce, but you can use pretty much any greens you like. Black bean salsa is good with chips, but it tastes great on salad. It was a hit with the family and everyone requested seconds. 

 

You can prepare your salad and salsa ahead of time, and just have it in the fridge ready to go when you want to have some pizza. This past Friday I actually made everything at the same time. By the time my pizza was finished in the oven, the plates were prepared with the salad and we all got to sit down and have dinner together as a family. Everything was done in under 30 minutes and my family was happy. 

On busy nights when I can’t even think about cooking a meal that will take hours, pizza and salad is my go to! Don’t forget to stop by your local Publix to pick up  Freschetta ® Artisan Crust Pizza 2 for $10 until June 8th!
